In a large brew kettle, heat 4 gallons of water to 160°F. Add the pale malt, caramel malt, and wheat malt. Stir well and maintain a temperature of 150-155°F for 60 minutes.

Mashing

After mashing, sparge with hot water to collect a total of 6 gallons of wort in the kettle.

Sparging

Bring the wort to a boil. Add the bittering hops and boil for 60 minutes. 15 minutes before the end of the boil, add the aroma hops.

Boiling

Cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F.

Cooling

Transfer the cooled wort to a sanitized fermenter. Pitch the Brettanomyces yeast and Lactobacillus culture. Seal the fermenter and keep it in a dark, temperature-controlled environment (around 68-72°F) for 3-4 weeks.

Fermentation

After primary fermentation, add the raspberries and bourbon to the fermenter. Allow to ferment for an additional 2-3 weeks.

Secondary Fermentation

Once fermentation is complete, bottle the beer with priming sugar for carbonation. Let the bottles condition at room temperature for 1-2 weeks.

Bottling
