Grouper Preparation

Marinate the Grouper

In a bowl, mix lime juice, olive oil, salt, and black pepper. Coat the grouper fillets with the marinade and let sit for at least 30 minutes.

Wrap in Banana Leaves

Place each marinated grouper fillet on a banana leaf and wrap securely. Tie with kitchen twine if necessary.

Roast

Preheat the oven to 375°F (190°C). Place wrapped grouper on a baking sheet and roast for 25-30 minutes.

Salsa Verde Preparation

Blend Ingredients

In a food processor, combine parsley, cilantro, garlic, capers, lemon juice, olive oil, and salt. Blend until smooth.

Coconut Espuma Preparation

Prepare Gelatin

In a small bowl, dissolve gelatin in water and let sit for 5 minutes.

Mix Coconut Cream

In a saucepan, combine coconut cream, lime zest, and sugar. Heat gently until warm, then stir in the gelatin until fully dissolved.

Chill and Whip

Chill the mixture in the refrigerator for about 1 hour. Once chilled, whip until frothy.

Fried Sweet Potato Preparation

Prepare Sweet Potatoes

Peel and cut sweet potatoes into thin strips.

Fry Sweet Potatoes

Heat vegetable oil in a deep fryer or large pot. Fry sweet potato strips until golden brown and crispy. Remove and drain on paper towels. Season with salt.

Serve

On a plate, place the roasted grouper, drizzle with salsa verde, add a dollop of coconut espuma, and serve with fried sweet potato on the side.
