Salt the rim

Run the lime wedge around the rim of a chilled rocks or coupe glass. Spread the coarse sea salt on a small plate and gently press the rim into the salt to create an even salted edge. Set the glass aside.

Fill the prepared glass with ice if serving on the rocks, or leave chilled and ice-free for a coupe-style presentation. Reserve the thin lime wheel for garnish.

Cocktail Assembly

In a cocktail shaker, add 1 cup of ice, 2 tbs Don Julio Blanco tequila, 1 tbs Agave Rosé liqueur (or 1 tbs agave syrup with a splash of rosé to approximate), and 0.75 oz fresh lime juice.

Shake vigorously for 10–15 seconds until well chilled.

Double-strain (or fine-strain) the cocktail into the prepared glass over fresh ice if using a rocks glass; if using a coupe, pour without ice.

Carefully float 0.25 oz Grand Marnier over the top by pouring it slowly over the back of a bar spoon so it forms a thin aromatic layer.

Wine Top & Pairing

For a rosé-forward rendition (lighter, fragrant): gently top the cocktail with 3 oz Symphonie Sainte Marguerite Côtes de Provence 2024 (or Whispering Angel / Château d'Esclans 2025). Pour slowly so it mingles but doesn’t completely dilute the cocktail base.

For a brighter, herbaceous twist or as an alternate pairing: substitute or add 2 oz Kim Crawford Sauvignon Blanc (Marlborough 2025) or Cade Sauvignon Blanc (Napa Valley 2025) either poured alongside the rosé or served in a small carafe to sip with the cocktail.

Finish with the reserved thin lime wheel on the rim or floated on top as garnish.

Present the cocktail immediately while chilled. Suggestion: offer the rosé-topped version as the default (3 oz rosé), with a small pour of Sauvignon Blanc on the side for guests who prefer a brighter white wine note.
