Mussels & Cooking Liquid
Prepare mussels
Rinse mussels under cold water, discard any with cracked shells or that do not close when tapped. Remove beards by pulling toward the hinge and scrub shells if needed. Keep cold until ready to cook.
Sauté aromatics
In a large heavy-bottomed pot or deep skillet with a tight-fitting lid, heat 1 tablespoon olive oil and 2 tablespoons butter over medium heat until butter foams. Add minced shallots and cook 2–3 minutes until softened and translucent (do not brown). Add minced garlic and fresh thyme and cook 30–45 seconds until fragrant.
Deglaze & reduce
Pour in the white wine and bring to a gentle boil. Scrape any browned bits from the bottom of the pan. Allow wine to simmer 2–3 minutes to burn off alcohol and concentrate flavor.
Add mussels & steam
Add the cleaned mussels to the pot, pour in the chicken/fish stock, sprinkle in salt and black pepper, then cover with the lid. Increase heat to high so liquid comes to a vigorous simmer and steam the mussels for 4–6 minutes, shaking the pot once or twice, until most mussels have opened.
Finish sauce
Remove the pot from heat. Use tongs to transfer opened mussels to a warm serving bowl, discarding any mussels that remain tightly closed. Return pot to low heat, add remaining 2 tablespoons butter, lemon zest and lemon juice, and chopped parsley; swirl to emulsify the sauce into a glossy broth. Taste and adjust seasoning with salt and pepper as needed. Pour sauce and any juices over the mussels.
Grilled Baguette
While mussels steam, brush both sides of each baguette slice with the remaining 1 tablespoon olive oil. Heat a grill pan or skillet over medium-high heat until hot. Grill slices 1–2 minutes per side until nicely charred and warmed through. Immediately rub the cut side of the halved garlic clove over the toasted surface for a subtle garlic flavor.
Parmesan Crisps
Preheat oven to 400°F (200°C). Line a baking sheet with parchment. Make small mounds (about 1 tablespoon each) of grated Parmesan spaced 2" apart. Lightly pepper each mound. Flatten slightly with the back of a spoon. Bake 4–6 minutes until edges are golden and cheese is bubbling. Remove from oven and let crisps cool on the sheet for 2 minutes, then transfer to a rack to crisp fully.
Plating & Finish
Arrange mussels in a shallow bowl or wide serving dish; spoon the hot broth over them. Scatter remaining chopped parsley over the mussels. Place grilled baguette slices alongside or on top to soak up broth. Garnish with Parmesan crisps and lemon wedges. Serve immediately so guests can dip bread in the aromatic broth.
