Method
Prepare Cocktail Base
Brew/Chill
If using espresso: pull double-strength espresso (about 1 cup) and chill until cold. If using cold-brew: measure 1 cup of strong cold-brew. Chill in the refrigerator until near 35–45°F (2–7°C).
Sweeten & Mix
In a clean mixing pitcher, combine the chilled coffee (1 cup), vodka (3 oz), coffee liqueur (1 oz) and simple syrup (0.5 oz). Add citric acid (0.125 tsp) if using to brighten flavor. Stir gently for 10–15 seconds to combine. Taste and adjust sweetness: add up to 0.25 oz more simple syrup if you prefer sweeter.
Carbonation & Canning
Cool and Degas
Place the mixed cocktail in the refrigerator for at least 30 minutes to ensure it's thoroughly chilled. Lightly pour the mixture into a measuring container and let it sit upright for 5 minutes to allow any large bubbles to dissipate.
Add Soda
Slowly fold in the club soda or cold seltzer (0.75 cup) to the chilled cocktail. Do this gently to preserve as much effervescence as possible while avoiding excessive foaming. Taste quickly and adjust.
Sanitize Cans
Ensure your cans and funnels are sanitized and cold. Pre-chill cans if possible to minimize foaming during filling.
Fill Cans
Using a sanitized funnel or a counter-pressure filler, fill each can to about 0.5 inch (12 mm) headspace. For a 250–355 ml can, aim for roughly 8–12 oz of cocktail per can depending on can size. If using 4 cans, divide the batch evenly among them.
Seal & Chill
Immediately seal the cans with a sanitized seamer or use a reliable canning machine. Place sealed cans upright in the refrigerator or an ice bath to rapidly chill. Rapid chilling reduces loss of carbonation and preserves aroma.
Optional Pressurization
If you have counter-pressure canning equipment, chase the headspace with CO2 before final sealing per your device instructions to improve carbonation stability. Alternatively, a small nitro cartridge can be used if you desire a creamier mouthfeel—follow equipment safety instructions.
Garnish & Serve
Dusting: Immediately after sealing (or just before serving if not practical), lightly dust the top of the can opening with 0.25 tsp instant espresso powder for aroma. If cans are already sealed, tuck one whole coffee bean into the tab area under the pull tab or include it under a tamper-evident lid sticker so it sits on top of the can when opened.
Chill & Rest: Let the sealed cans rest chilled for at least 1 hour before serving to let flavors marry and carbonation stabilize. For best texture, consume within 5–7 days refrigerated. Shake gently is not recommended; open carefully to preserve effervescence.
