Directions
Prepare the Squid
Clean the squid by removing the head, innards, and the transparent quill. Cut the body into rings about 1 inch thick.
Make the Batter
In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually add cold water, whisking until the batter is smooth and slightly thick.
Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).
Coat and Fry the Squid Rings
Dip the squid rings into the batter, ensuring they are well coated. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown.
Drain and Serve
Remove the fried squid rings with a slotted spoon and drain on paper towels. Serve hot with lemon wedges and tartar sauce on the side.
