Method
Preparing the Base
In a medium saucepan, combine the whole milk, heavy cream, and half of the sugar. Heat over medium heat until the mixture is hot but not boiling.
Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes). Do not let it boil.
Remove from heat and stir in the vanilla extract.
Chilling and Churning
Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft serve consistency.
For chocolate gelato, add cocoa powder during the churning process. For fruit gelato, add fruit puree once the gelato is almost fully churned.
Transfer the gelato to an airtight container and freeze for at least 2 hours before serving.
