Chocolate Cakes
Prep Ramekins
Preheat the oven to 220°C (425°F). Lightly butter four 6-ounce (180 ml) ramekins. Dust the inside of each ramekin with cocoa powder, tapping out excess. Place ramekins on a baking sheet and set aside.
Melt Chocolate and Butter
In a heatproof bowl set over a saucepan of barely simmering water (double boiler), combine the chopped bittersweet chocolate and the 175 g butter. Stir occasionally until fully melted and smooth. Remove from heat and let cool 2–3 minutes.
Combine Eggs and Sugar
In a separate bowl, whisk together the 4 whole eggs, 2 egg yolks, and 150 g granulated sugar until the mixture is pale, lightly thickened and slightly ribboning (about 1–2 minutes of vigorous whisking by hand or 30–45 seconds with an electric mixer).
Fold in Flour
Sift the 50 g all-purpose flour and the pinch of salt over the batter. Fold gently until no streaks of flour remain. Do not overmix — you want a smooth batter but with some aeration retained.
Portion Batter
Divide the batter evenly among the four prepared ramekins (about 125–140 g batter per ramekin). Smooth the tops with a spoon or offset spatula.
Bake
Bake on the center rack for 10–12 minutes. The edges should be set and the centers still soft and slightly jiggly — this timing gives a molten center. For slightly firmer centers, add 1–2 minutes; for runnier centers, reduce by 1 minute.
Rest and Unmold
Remove the baking sheet from the oven and let the ramekins rest for 1 minute. Run a small knife around the inside edge of each ramekin to loosen. Invert each ramekin onto a small dessert plate and lift gently to release the cake. If cakes resist, tap the ramekin bottom and try again.
Berry Coulis
Cook Berries
Place the 250 g mixed berries, 50 g icing sugar, 1 tbsp lemon juice, and 1 tbsp water in a small saucepan over medium heat. Cook, stirring occasionally, until the berries have softened and released juices (about 5–7 minutes).
Blend and Strain
Remove from heat. Puree the mixture with an immersion blender or in a countertop blender until smooth. For a silky coulis, pass the puree through a fine-mesh sieve into a bowl, pressing with a spatula to extract as much liquid as possible. Discard seeds and solids left in the sieve.
Cool
Taste and adjust sweetness or acidity with a little extra icing sugar or lemon juice if needed. Let the coulis cool to room temperature, then refrigerate briefly if preparing ahead — serve slightly chilled or at room temperature.
To Serve
Plate each molten cake by placing one inverted cake on a dessert plate. Spoon about 1–2 tablespoons of berry coulis beside or partially under the cake. Add one scoop of vanilla ice cream next to the cake (the contrast of hot cake and cold ice cream is essential). Garnish with 2 fresh berries per plate and dust lightly with powdered sugar if desired.
Serve immediately so the center remains molten. Provide a small dessert spoon or fork for cutting into the cake to release the lava center.
