Method

For the milanesa

Prepare cutlets

If cutlets are thicker than 1/4 inch, place between plastic wrap and gently pound with a meat mallet until about 1/8–1/4 inch thick. Pat dry with paper towels. Season both sides lightly with 1 tsp salt and 1/2 tsp black pepper.

Set up breading station

Arrange three shallow dishes: one with flour, one with beaten eggs mixed with milk, salt (1/2 tsp) and a pinch of pepper, and one with breadcrumbs combined with grated Parmesan, garlic powder, dried oregano, paprika, and remaining 1 tsp salt.

Bread the cutlets

Dredge each cutlet in flour, shaking off excess, dip into the egg wash, then press firmly into the breadcrumb mixture until evenly coated. Place on a wire rack and let rest 10 minutes to help coating adhere.

Frying method

Heat about 1/2–3/4 cup vegetable oil in a large skillet over medium-high heat until shimmering (about 350°F/175°C). Fry cutlets in batches for 2–3 minutes per side, turning once, until golden brown and cooked through (internal temp for beef 145°F/63°C or for chicken 165°F/74°C). Transfer to paper towels to drain. Keep warm in a low oven (200°F/95°C) if needed.

Grilling method (alternative)

Brush both sides of breaded cutlets lightly with olive oil. Preheat a grill or grill pan over medium-high heat. Grill 2–3 minutes per side until grill marks appear and coating is set and meat cooked through. Grilling yields a slightly lighter, crisp result. Use the same internal temps as above to check doneness.

Finish

Squeeze fresh lemon over the milanesa just before serving. Garnish with chopped parsley if desired.

French fries option

Peel (optional) and cut potatoes into 1/4–1/2 inch sticks. Soak in cold water 20–30 minutes to remove excess starch. Drain and dry completely with towels.

Blanching

Heat oil in a deep pot or fryer to 325°F (160°C). Blanch potatoes in batches for 3–4 minutes until just tender but not browning. Remove and drain on paper towels.

Final fry

Increase oil temperature to 375°F (190°C). Fry potatoes in batches 2–3 minutes until golden and crispy. Drain on paper towels and immediately season with salt.

Mixed salad option

In a large bowl combine mixed greens, cherry tomatoes and sliced red onion.

Whisk together olive oil, red wine vinegar, 1/2 tsp salt and 1/4 tsp black pepper. Toss dressing with the greens just before serving to keep salad crisp.

Mashed potatoes option

Peel (if desired) and cut potatoes into even chunks. Place in a pot, cover with cold water, add 1 tsp salt and bring to a boil. Simmer until fork-tender, 15–20 minutes.

Drain well and return potatoes to the pot. Add butter and mash until mostly smooth. Stir in warmed milk or cream a little at a time until desired consistency. Season with 1 tsp salt and 1/2 tsp black pepper; adjust to taste.

Packaging & assembly (Lunch Box)

Choose one side: portion 1 milanesa cutlet into a lunch box (leave whole or halve for portion control). Add a generous serving of chosen side (fries, salad or mashed potatoes). Include a small container of lemon wedges and optional mayo or chimichurri. Sprinkle parsley over milanesa. Let hot items cool slightly before sealing container to avoid sogginess.
