Method
Baked Sweet Potato
Prepare and Bake
Preheat the oven to 400°F (200°C). Scrub the sweet potatoes and pat dry. Prick each potato several times with a fork. Rub each potato with 1/2 tsp olive oil and sprinkle evenly with 1/2 tsp salt and half the cinnamon if using. Place on a baking sheet lined with foil or parchment.
Spinach Salad
Prepare Vegetables
While potatoes bake, rinse and spin dry the baby spinach. Halve the cherry tomatoes. Peel (if desired) and thinly slice the cucumber into half-moons. Thinly slice the red onion and place all vegetables in a medium bowl.
Make Dressing & Toss
In a small bowl whisk together 1 tablespoon extra-virgin olive oil, 1 teaspoon fresh lemon juice, 1 teaspoon honey or maple syrup, a pinch of salt and pepper. Pour dressing over the spinach mixture and toss to coat. Sprinkle 2 tablespoons feta over the top if using.

Cook Eggs Any Style — Sunny Side Up (example)
Heat a nonstick skillet over medium-low heat. Add 1 tsp butter and 1 tsp olive oil until foaming. Crack 2 eggs into a small bowl, then gently slide into the skillet. Season with a pinch of salt and pepper. Cook for 2–3 minutes until whites are set but yolks still runny for sunny-side. For over-easy, cook 2 minutes then gently flip and cook 15–30 seconds more. For scrambled, whisk eggs with a pinch of salt and cook low and slow, stirring, until soft curds form.
Avocado
Prep Avocado
Halve the avocado lengthwise, remove the pit, and scoop the flesh into a small bowl (or leave in the skin for presentation). Mash lightly with a fork and stir in 1/2 tsp fresh lemon or lime juice, a pinch of salt, and red pepper flakes if using. Taste and adjust seasoning.
Fresh Strawberries
Rinse and hull the strawberries. Slice larger berries into halves or quarters. Place strawberries in a small dish and, if desired, sprinkle with 1/4 tsp lemon zest to brighten flavor.
Plating & Serve
Divide baked sweet potatoes between two plates (or serve both on one plate for 1 serving). Add the spinach salad to one side, place eggs where preferred, spoon mashed avocado next to the eggs, and add the fresh strawberries as a sweet component. Garnish with additional black pepper or herbs if desired.
