Mashing
1. Mash the Grains
In a large brew kettle, heat 5 gallons of filtered water to approximately 165°F (74°C). Add the pale malt, rye malt, and crystal malt, stirring well to combine. Maintain the temperature at around 152°F (67°C) for 60 minutes.
2. Sparging
After mashing, sparge the grains with additional hot water (about 170°F/77°C) to collect enough wort to reach 5 gallons in total.
Boiling
3. Boil the Wort
Bring the collected wort to a rolling boil. Once boiling, add the Cascade hops and boil for 60 minutes.
4. Add Finishing Hops
With 15 minutes left in the boil, add the Willamette hops to the kettle.
Fermentation
5. Cool and Transfer
After boiling, cool the wort quickly using a wort chiller to around 70°F (21°C). Transfer the cooled wort to a sanitized fermentation vessel.
6. Pitch the Yeast
Sprinkle the American Ale yeast on top of the cooled wort in the fermentation vessel. Seal the vessel with an airlock.
Bottling
7. Prepare for Bottling
After fermentation is complete (about 1-2 weeks), dissolve the priming sugar in a small amount of boiling water, then cool it and add it to the bottling bucket.
8. Bottle the Beer
Siphon the beer from the fermentation vessel into the bottling bucket, mixing gently with the priming sugar solution. Bottle the beer into sanitized bottles and cap them.
Conditioning
9. Carbonate
Let the bottled beer condition at room temperature for about 2 weeks to carbonate.
10. Chill and Serve
After conditioning, chill the bottles in the refrigerator, pour into a glass, and enjoy your Third Wheel Sandman!
