In a large brew kettle, heat 5 gallons of filtered water to 165°F (74°C). Pour in the Pale Malt, Crystal Malt, and Carapils Malt. Stir thoroughly and maintain the temperature at 152°F (67°C) for 60 minutes.

Mashing the Grains

After mashing, drain the liquid (wort) into another kettle. Bring the wort to a boil, then add the Citra, Simcoe, and Amarillo hops. Boil for 60 minutes, adding the hops at the start of the boil.

After the boil, quickly cool the wort using a wort chiller or an ice bath until it reaches 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter. Add the American Ale yeast and stir gently. Seal the fermenter with an airlock and let it ferment in a cool, dark place for 1-2 weeks.

Ferment the Beer

After fermentation is complete, dissolve the priming sugar in a small amount of boiling water. Add this to the beer before bottling. Bottle the beer and cap securely. Allow it to carbonate at room temperature for 1-2 weeks.
