Strawberry Shake

Harvest the Cabernet Sauvignon grapes at their peak ripeness, ensuring a balance of sugars and acidity for optimal flavor.

Harvesting the Grapes

Crush the harvested grapes and remove the stems. This can be done by hand or with a grape crusher. The goal is to release the juice while keeping the skins intact.

Crushing and Destemming

In a large fermentation vessel, combine crushed grapes, water, and sugar. Sprinkle yeast over the mixture and stir gently. Cover with a clean cloth and let it ferment for about 7-10 days, stirring daily.

Fermentation

Once fermentation is complete, press the mixture to separate the liquid from the solids. Use a wine press or a clean cloth to extract as much juice as possible.

Pressing the Wine

Transfer the pressed wine into a clean fermentation vessel. Add tannin and oak chips if desired. Allow the wine to age for at least 6 months in a cool, dark place to develop its flavors.

Aging the Wine

After aging, filter the wine to remove any sediment and transfer it into clean wine bottles. Seal with corks and label accordingly.

Bottling

Let the wine breathe for at least 30 minutes after opening. Serve slightly below room temperature in a wine glass and enjoy the complex flavors of dark plum, cassis, tobacco, and mint.
