In a large mash tun, add the pale malt and Carapils malt. Heat 5 liters of filtered water to 65°C (149°F) and pour over the grains. Stir well to ensure there are no dry spots.

Prepare the Mash

Allow the mash to rest at this temperature for 60 minutes. Stir occasionally to maintain an even temperature throughout.

Mash Rest

After the mash rest, gradually add 75°C (167°F) water to rinse the grains. Collect the wort in a separate kettle until you have approximately 4 liters.

Sparging

Bring the collected wort to a boil over medium heat.

Bring to Boil

Once boiling, add the Hallertau hops. Boil for 15 minutes.

Add Hops

After 15 minutes, add the Saaz hops and continue boiling for an additional 5 minutes.

Remove the kettle from heat and cool the wort quickly using a wort chiller or an ice bath until it reaches 20°C (68°F).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the Kölsch yeast. Seal the fermenter with an airlock.

Fermentation

Allow the beer to ferment at 20°C (68°F) for 10-14 days until fermentation is complete.

Primary Fermentation

While the beer is fermenting, sanitize your bottles and caps.

Prepare Bottles

Dissolve the priming sugar in a small amount of boiling water and let it cool. Once the fermentation is complete, add this to the beer before bottling to carbonate.

Add Priming Sugar

Fill each bottle with beer, leaving about 1 inch of headspace, and cap securely.

Bottle the Beer

Store the bottles at room temperature for 1-2 weeks to allow carbonation to develop.

Condition the Beer
