Prepare vegetables

Thinly shred the cabbage, julienne or grate the carrot, finely chop the mushrooms, and thinly slice the scallions. Mince the garlic and ginger. Crumble the tofu if using. Combine all prepared vegetables and tofu in a bowl and set aside.

Cook the filling

Heat 1 teaspoon vegetable oil in a skillet over medium-high heat. Add the mushrooms and cook 1–2 minutes until they begin to release liquid. Add garlic and ginger and cook 20–30 seconds until fragrant. Add the cabbage and carrot and stir-fry 2–3 minutes until vegetables are wilted but still slightly crisp. Add crumbled tofu (if using), soy sauce, sesame oil, salt, and black pepper. Stir continuously 1–2 minutes to combine and evaporate excess moisture. Taste and adjust seasoning. Remove from heat and transfer to a shallow bowl to cool—filling should be warm, not hot, before wrapping to prevent soggy wrappers.

Drain if needed

If the filling seems very wet, place it in a fine-mesh sieve and press gently to remove excess liquid. Excess moisture will cause the spring roll to burst or become greasy when frying.

Prepare wrappers

If using frozen wrappers, thaw according to package directions. Keep wrappers covered with a damp towel so they do not dry out while assembling. If using a cornstarch sealing slurry, mix 1 teaspoon cornstarch with 1 tablespoon cold water until smooth.

Assemble rolls

Lay one wrapper flat (diamond shape with a point facing you if round). Place about 2–3 tablespoons of filling in a line slightly below center. Fold the bottom corner over the filling, tuck tightly, fold both side corners toward the center, then roll up toward the top corner to enclose. Seal the top corner with a little water or the cornstarch slurry. Repeat until all wrappers are filled (yields about 6 medium rolls). Keep assembled rolls covered lightly with a damp towel to prevent drying.

Final check

Press gently on each roll to ensure there are no air pockets and that edges are well sealed. If any have loose seams, seal with a bit more slurry.

Frying / Finishing

Heat oil

Pour 1½–2 cups neutral oil into a heavy-bottomed skillet or saucepan to a depth of about 1–1.5 inches (enough for shallow frying) and heat over medium-high until it reaches 350°F (175°C) or a drop of water sizzles immediately. If deep-frying, use enough oil to fully submerge rolls and heat to 350°F (175°C).

Fry rolls

Carefully place 2–3 rolls (do not overcrowd) seam-side down into hot oil. Fry, turning occasionally, until evenly golden brown and crisp, about 2.5–4 minutes per batch depending on size and oil temperature. Adjust heat to maintain temperature; lower heat will make them greasy, too high will brown too fast. Use a slotted spoon or tongs to transfer cooked rolls to a plate lined with paper towels to drain.

Finish & garnish

While still hot, optionally sprinkle with sesame seeds. Let rest 1–2 minutes to crisp up, then serve immediately with sweet chili sauce and a squeeze of lime if desired.

Dipping Sauce (optional)

Stir the sweet chili sauce with lime juice and chopped cilantro. Taste and adjust acidity or herbs. Serve in a small bowl alongside the spring roll for dipping.
