Method
Shrimp filling
Prepare shrimp
Pat the shrimp dry with paper towels. Coarsely chop the shrimp into small pieces (or pulse briefly in a food processor 2–3 short pulses) until you have a coarse paste — not completely smooth. Transfer to a mixing bowl.
Season and bind
Add the minced garlic, minced shallot, light soy sauce, fish sauce, white pepper, sugar and cornstarch to the chopped shrimp. Add 1 tablespoon vegetable oil. Mix thoroughly until well combined and slightly sticky. Refrigerate for 10–15 minutes to let flavors marry; this also firms the mixture for easier handling.
Wrappers & assembly
Prepare workspace: lay out a clean board, the spring roll wrappers, a small bowl of beaten egg for sealing, and the optional dusting flour if the wrappers are sticky.
Divide the shrimp mixture into 4 equal portions (about 50 g each). Lightly dust your hands or the wrappers with a little flour if needed to prevent sticking.
Place one spring roll wrapper in diamond orientation in front of you. Spoon one portion of the shrimp filling along the bottom third of the wrapper, forming a log roughly 3–4 cm wide centered across the wrapper.
Fold the bottom corner up over the filling, tuck in the sides snugly, then roll tightly toward the top corner. Brush the top corner with beaten egg to seal. Repeat with remaining wrappers and filling. Place finished rolls seam-side down on a tray and refrigerate for 10 minutes to firm up (helps maintain shape when frying).
Frying
Fry rolls: working in a single layer (do not overcrowd), carefully lower the shrimp rolls seam-side down into the hot oil. Fry for 2.5–3.5 minutes, turning once, until golden brown and crisp. The shrimp inside should be cooked through. Use tongs or a slotted spoon to remove and drain on a paper towel-lined rack.
Keep warm: place finished rolls on a baking sheet in a 90°C (200°F) oven to keep warm while frying remaining batches if necessary.
Thai sweet & sour dipping sauce
Make sauce base: in a small saucepan combine sugar, water, rice vinegar and ketchup. Stir to dissolve the sugar.
Heat gently over medium-low until just simmering. Stir in the minced garlic and red chili flakes. In a small bowl whisk the 0.5 tsp cornstarch with 1 tsp cold water to make a slurry, then whisk into the simmering sauce to thicken slightly (about 30–60 seconds).
Finish and cool: remove from heat, stir in lime juice. Taste and adjust balance — add a little more sugar for sweetness, vinegar for tang, or chili for heat. Let cool to warm or room temperature before serving; sauce will thicken slightly as it cools.
To serve
Arrange 4 crispy Koong Gra Bok on a plate. Serve immediately with the Thai sweet & sour dipping sauce on the side. Provide napkins — these are best eaten hot and crisp.
