Method
Spring Roll Filling (Chicken + Vegetables)
Prep
Finely dice the chicken into small pieces (~3–5 mm). Shred cabbage, julienne carrot, trim bean sprouts, slice scallions, and mince garlic and ginger. If using tofu/mushrooms for vegetarian version, crumble/finely chop and set aside.
Heat 1 tablespoon vegetable oil in a skillet or wok over medium-high heat until shimmering.
Add minced garlic and ginger; stir-fry 15–20 seconds until aromatic but not browned.
Add diced chicken (or tofu/mushrooms for veggie) and stir-fry 2–3 minutes until chicken is mostly cooked through and pieces are no longer translucent.
Add shredded cabbage, carrot, and bean sprouts. Stir-fry 1–2 minutes — you want the vegetables softened but still slightly crunchy so they won’t release too much water in the wrapper.
Stir in soy sauce, oyster sauce, sesame oil, salt, and pepper. If mixture seems loose, sprinkle 1 teaspoon cornstarch over filling and toss; the cornstarch will bind juices. Cook 30–45 seconds to incorporate flavors.
Remove filling from heat and stir in sliced scallions. Spread the filling on a plate or bowl to cool to near room temperature (10–15 minutes). Cooling is important so wrappers don’t get soggy.
Assembly
Place one spring roll wrapper on a clean flat surface with one corner pointing toward you (diamond orientation). Keep remaining wrappers covered with a damp cloth to prevent drying.
Spoon about 3–4 tablespoons (approx. 60–75 g) of cooled filling horizontally across the lower third of the wrapper, leaving 1/2 inch border at edges.
Fold the corner closest to you up over the filling, then fold both side corners in toward the center to create neat edges.
Roll the filled wrapper away from you tightly until about 1 inch from the top edge remains. Mix 1 tablespoon flour with 2 tablespoons water to make a thin paste. Brush the top edge with the paste and finish rolling to seal. Repeat to make 4 rolls.
Frying
Fry spring rolls in batches (do not overcrowd) for 2.5–4 minutes, turning occasionally, until golden brown and crisp on all sides. For safer shallow frying, use enough oil to cover half the roll and turn to brown both sides, about 3–4 minutes each side.
Use a slotted spoon to transfer fried rolls to a paper towel–lined plate to drain excess oil for 1–2 minutes.
Let rest 1–2 minutes before cutting diagonally in half (optional) and serving so steam escapes and filling stays crisp.
Thai Sweet & Sour Dipping Sauce
In a small saucepan, combine rice vinegar, sugar, ketchup, chopped chilies, minced garlic, water, and fish sauce (if using). Stir to combine.
Bring mixture to a gentle simmer over medium heat, stirring until sugar dissolves (about 1–2 minutes).
Mix 1/2 teaspoon cornstarch with 1 teaspoon cold water to make a slurry. Stir slurry into simmering sauce and cook 30–60 seconds until sauce thickens slightly. Remove from heat and let cool a few minutes; sauce will thicken more as it cools.
Taste and adjust heat/sweetness with more chilies or sugar as needed. Transfer to a small bowl for serving.
Plating & Garnish
Arrange shredded lettuce or cabbage on the serving plate, place crispy spring rolls on top, and serve with warm Thai sweet & sour sauce and lime wedges on the side.
Serve immediately for best crispness. Leftovers can be reheated in a 200°C (400°F) oven for 6–8 minutes to re-crisp.
