Prep
Chill glassware and ingredients
Place the sparkling wine and club soda in the refrigerator to chill for at least 30 minutes. If possible, chill serving glasses in the freezer for 10–15 minutes so the spritz stays colder longer.
Juice blood oranges
Roll the blood oranges firmly on the counter to release juice, then slice and press to extract enough juice to equal 1 cup. Strain the juice through a fine-mesh sieve into a measuring cup to remove seeds and pulp (optional) and set aside.
Mixing
In a large pitcher or mixing bowl, combine the strained blood orange juice and fresh lemon juice. Add the simple syrup (or honey syrup) and stir until fully incorporated. Taste and adjust sweetness—add up to 1 tablespoon more simple syrup if you prefer sweeter.
Stir in the aperitif or bitter liqueur and the orange bitters (if using) until evenly mixed.
Add chilled club soda to the juice-aperitif mixture and stir gently to combine. This creates the non-alcoholic base so carbonation is preserved when wine is added.
Finish & Serve
Fill each chilled serving glass (wide wine glass or highball) with large ice cubes, filling about two-thirds of the glass.
Garnish each cocktail with a blood orange wheel and either a twisted lemon peel or a sprig of fresh thyme. Give a gentle stir once to integrate layers without flattening the bubbles.
Serve immediately while sparkling and cold.
