Prepare and char eggplants

Prick eggplants a few times with a fork to prevent bursting. Rub lightly with 2 tbs olive oil and sprinkle with 1 tsp kosher salt. Char the eggplants whole over an open gas flame, on a grill, or under a very hot broiler, turning occasionally, until the skins are deeply blackened and the flesh collapses — about 20–30 minutes depending on method. You want soft, smoky flesh, not raw interior.

Once charred, transfer the eggplants to a bowl and cover tightly with plastic wrap or place in a sealed container for 10 minutes to steam; this makes peeling easier and mellows bitterness.

When cool enough to handle, remove skins, stem, and any large seeds by tearing open the eggplants and scraping out the flesh with a spoon. Transfer flesh to a fine-mesh sieve set over a bowl and let drain 5–10 minutes to remove excess liquid (press gently with a spoon if very watery).

Build the melitzanosalata

Place the drained eggplant flesh in a medium mixing bowl. Add 1 cup Greek yogurt, 2 tbs lemon juice, 1 peeled garlic clove, 1 tsp red wine vinegar, and 1 tsp ground black pepper.

Using a fork or a potato masher, mash the mixture to your desired texture — traditionally slightly chunky but well combined. For a silkier result, pulse briefly in a food processor (1–3 short pulses) being careful not to over-process into a purée; stop when still a bit textured.

While stirring, drizzle in 3 tbs of good-quality extra-virgin olive oil to emulsify and round the flavors. Taste and adjust seasoning with more lemon juice, salt, or pepper as needed.

Spoon melitzanosalata into a shallow serving bowl and smooth the top with the back of a spoon. Make a shallow well in the center and drizzle 1 tbs extra-virgin olive oil over the top. Sprinkle 2 tbs chopped parsley, 1 tsp smoked paprika or Aleppo pepper (if using), and 1/2 tsp flaky sea salt evenly over the surface.

Let the salad rest at room temperature 20–30 minutes before serving to allow flavors to meld. Serve with warm pita, crusty bread, or as part of a mezze spread. Leftovers keep covered in the refrigerator for up to 3 days; bring to room temperature before serving.
