Lamb Burgers

Grilled Rib Eye (to accompany burger description)

Method

Potatoes

Preheat oven to 425°F (220°C). Toss halved baby potatoes with 1 tablespoon olive oil, thyme, 1/2 tsp salt and 1/4 tsp black pepper on a rimmed baking sheet. Spread in a single layer.

Roast for 25–30 minutes, shaking pan once halfway, until golden and crisp on the edges and tender inside. Keep warm.

Mushrooms

While potatoes roast, heat 1 tablespoon butter and 1 teaspoon olive oil in a large skillet over medium-high heat until foaming.

Add mushrooms in a single layer and let them sear without moving for 2–3 minutes. Toss and continue cooking 3–4 minutes until browned.

Add 1 minced garlic clove, 1/4 tsp salt and 1/4 tsp pepper. Cook 30–60 seconds until fragrant. Stir in chopped parsley, remove from heat and cover to keep warm.

Grilled Rib Eye (optional accompaniment)

If serving rib eye, bring steaks to room temperature for 30 minutes. Preheat grill or cast-iron skillet to high heat. Rub steaks with 1 tablespoon olive oil and season with 1 tsp kosher salt and 1/2 tsp black pepper.

Grill steaks 4–5 minutes per side for medium-rare (depending on thickness) or to desired doneness. Rest on a cutting board loosely tented with foil for 5–10 minutes before slicing against the grain.

Lamb Burgers

In a large bowl combine 1 lb ground lamb, 1/2 cup finely grated onion (squeeze out excess moisture if very wet), 2 tsp minced garlic, 2 tbsp chopped parsley, 1 tsp chopped rosemary, 1 tsp smoked paprika, 1/2 tsp ground cumin, 1 tsp kosher salt and 1/2 tsp black pepper. Mix gently with your hands until just combined—do not overwork.

Divide the mixture into four equal portions and shape into patties about 3/4-inch thick, making a slight indentation in the center of each to prevent doming.

Heat a large skillet or grill over medium-high heat and add 1 tablespoon olive oil. When hot, cook the patties 3–4 minutes per side for medium (adjust time to desired doneness). If using cheese, top patties with crumbled feta or slices of provolone in the last minute and cover to melt.

Transfer cooked patties to a plate and let rest 3–5 minutes.

Assembly & Serving

Lightly toast burger buns on the grill or in a skillet until golden, about 1 minute per side.

Spread mayonnaise or tzatziki on bottom buns. Place mixed greens, a lamb patty, tomato slice and red onion slices. Top with the bun crown.

Plate burgers with roasted potatoes and sautéed mushrooms on the side. If serving rib eye as in the description, add sliced steak alongside. Serve with lemon wedges and extra condiments.
