Chill a white wine or flute glass in the freezer for 10–15 minutes, or fill it with 2–3 ice cubes to cool briefly then discard ice before pouring (if serving ice is preferred, leave 3 cubes).

If using peach bitters or apple syrup, add 2 dashes of peach bitters or 5 ml apple syrup to the bottom of the chilled glass. These small additions accentuate peach and green-apple aromas without overwhelming the Prosecco.

Add modifiers (optional)

Hold the Prosecco bottle at a slight angle (about 45°) and slowly pour 5 oz chilled Prosecco into the glass to preserve bubbles and create a steady mousse. Pour gently down the side of the glass if you added modifiers so they gently mix without excessive agitation.

Float a thin green apple slice and a thin peach slice on the surface or rest them on the glass rim. If you have an edible honeysuckle flower, place it gently atop the foam for aromatic interest.

Serve immediately while the Prosecco is lively and cold. Recommend one standard serving per glass.
