Seafood & Marinade

Prep seafood

Cut mahi mahi into 1/2-inch cubes. If shrimp are large, cut into 2–3 pieces; leave smaller shrimp whole. Flake crab meat into bite-sized pieces, keeping some lumps intact.

Make marinade

In a non-reactive bowl combine clamato juice, Fanta Orange soda, and fresh lime juice. Whisk in kosher salt and black pepper. Taste — the Fanta adds sweetness; adjust lime or salt if needed to balance.

Marinate seafood

Place mahi, shrimp and crab into the marinade, ensuring fish is submerged. Cover and refrigerate 20–30 minutes. The mahi should turn opaque at the edges but not over-marinate (total marinade time for cubed fish 20–30 minutes).

Vegetables, Heat & Dressing

Prepare vegetables

While the seafood marinates, combine diced heirloom tomatoes, cucumber, red onion, tri-colored peppers and chopped cilantro in a mixing bowl.

Add smoked jalapenos

Stir the minced smoked jalapenos (chipotle or smoked jalapeno) into the vegetable mix. Start with 1 tbsp and add more to taste for heat/smoke. If you prefer milder heat, omit the seeds.

Dress vegetables

Add 1 tablespoon of the reserved marinade (see note) or 1 tablespoon fresh lime juice plus 1 tablespoon olive oil to the vegetables and toss gently to combine. Season with a pinch of salt to taste.

Combine seafood and vegetables

After marinating, remove seafood from the refrigerator. Using a slotted spoon, transfer the seafood into the vegetable bowl so excess marinade remains in the seafood bowl. Gently fold to combine, being careful not to mash the avocado or crab lumps.

Add avocado & finish

Gently fold in the diced avocado and 1 tablespoon extra-virgin olive oil. Taste and adjust seasoning with additional lime juice, salt or a splash (1–2 tbsp) of the reserved marinade for more clamato flavor. If you prefer less sweetness, skip adding more Fanta-containing marinade.

Chill briefly

Cover and chill the assembled ceviche for 5–10 minutes to let flavors marry. Do not over-chill — the texture is best when served slightly chilled but still fresh.

Plate and garnish

Spoon the Vuelve a la Vida into a shallow bowl or wide martini-style glass. Garnish liberally with micro cilantro and serve with lime wedges and corn tortilla chips on the side for scooping.
