For the berry sugar rim & garnish

Make berry sugar

Place 6 fresh blueberries and 2 tablespoons granulated sugar in a small bowl or mortar. Muddle or crush the blueberries into the sugar until the sugar is evenly tinted and slightly moist. Spread the blueberry sugar on a small plate and set aside to rim the glass.

Prepare glass

Rub the lime wedge around the outer rim of a highball or Collins glass, then dip the rim into the blueberry sugar, twisting to coat evenly. Fill the glass with crushed ice and set aside.

For the cocktail

Muddle fruit and mint

In a cocktail shaker or sturdy mixing glass, add the fresh blueberries (20 g) and 10 fresh mint leaves. Pour in 0.75 oz simple syrup and 0.75 oz fresh lime juice. Gently muddle 8–10 times to crush the blueberries and release mint oils—avoid over-muddling the mint to prevent bitterness.

Add rum and ice

Add 2 oz spiced rum to the shaker. Fill the shaker with a small amount of ice (enough to chill) and briefly shake 6–8 seconds to combine and chill the mixture.

Assemble the drink

Strain the shaken mixture (use a fine mesh strainer if you want to remove seeds and pulp) into the prepared glass filled with crushed ice. Top with 3 oz chilled club soda and gently stir once with a bar spoon to integrate.

Garnish and serve

Garnish with a mint sprig and 2–3 whole blueberries skewered or dropped on top. Optionally add the reserved lime wedge. Serve immediately with a straw.
