Prepare vegetables

Trim outer leaves from cabbages. Cut cored green cabbage into quarters and remove core; finely shred until you have about 4 cups. Repeat with red cabbage for 2 cups. Place shredded cabbages into a large mixing bowl.

Peel and grate the carrot using the large holes of a box grater (about 1 cup). Add to the bowl with cabbage.

Core and thinly slice the red bell pepper into matchsticks (about 1 cup) and add to the bowl.

Thinly slice green onions, chop cilantro, and roughly chop toasted peanuts. Reserve about 2 tablespoons of peanuts for garnish; add the rest to the bowl along with 2 tablespoons toasted sesame seeds, sliced green onions, and chopped cilantro.

Season the vegetables lightly with 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper; toss gently to distribute while you make the dressing.

Dressing

Combine dressing ingredients

In a medium bowl or mason jar combine 1 cup mayonnaise and 1 tablespoon plain Greek yogurt. Add 3 tablespoons rice vinegar, 2 tablespoons fresh lime juice, 2 teaspoons honey, 1 teaspoon soy sauce, 1 teaspoon toasted sesame oil, 1 teaspoon Sriracha, 1 teaspoon minced garlic, and 1 teaspoon grated fresh ginger.

Whisk or shake vigorously until smooth and fully emulsified. If the dressing is too thick, whisk in up to 2 tablespoons of water (add 1 tablespoon at a time) until you reach a pourable, creamy consistency.

Taste and adjust seasoning: add a pinch more salt, 1/2 teaspoon extra honey for sweetness, or extra Sriracha for heat as desired.

Assemble and finish

Pour about three-quarters of the dressing over the cabbage mixture (reserve some for serving). Using salad tongs or two large spoons, toss the slaw thoroughly until all ingredients are evenly coated. Let the slaw rest 10 minutes at room temperature for flavors to marry (or refrigerate 20–30 minutes for a chilled slaw).

Just before serving, taste and add remaining dressing if needed.
