Prepare fruit

Wash all fruit thoroughly. Thinly slice the blood oranges, navel orange, lemon, and lime into rounds (about 1/8-inch thick). Core the apple and slice thinly. If using fresh cherries, pit and halve them. Place all prepared fruit in a large pitcher or bowl that will hold at least 2 liters.

Muddle aromatics (optional)

Lightly bruise the rosemary sprigs with the back of a spoon or muddler to release oils. Add the rosemary to the pitcher with the fruit. If you want a slightly intensified herb note, gently muddle the rosemary with 1/4 of the fruit mixture to release aromas but avoid shredding the leaves.

Add liquids

Pour 1.5 liters of dry red wine into the pitcher over the fruit and rosemary. Add 1 cup freshly squeezed blood orange juice, 1/2 cup brandy, and 1/4 cup orange liqueur. Stir gently to combine so fruit is evenly distributed.

Sweeten

Add 3 tablespoons simple syrup to the pitcher. Stir and taste. If you prefer sweeter sangria, add up to 1 more tablespoon of simple syrup, tasting as you go.

Macerate

Refrigerate the sangria for at least 2 hours, preferably 4–8 hours or overnight. This allows the fruit to macerate, flavors to meld, and the rosemary note to infuse. Stir once or twice during chilling to redistribute fruit and aromatics.

Finish and Serve

Prepare glasses (optional)

If rimming the glasses, pour 2 tablespoons sugar onto a small plate. Rub a citrus wedge around the rim of each glass, then dip the rim into the sugar. Set glasses aside.

Add sparkling and ice

When ready to serve, remove the sangria from the refrigerator. Add 2 cups chilled club soda or sparkling water to the pitcher and stir gently to combine. Fill serving glasses with ice (about 1 cup per glass) or add ice to the pitcher (up to 6 cups) if serving immediately.

Serve

Ladle sangria into prepared glasses, making sure each glass gets a generous portion of fruit. Garnish each glass with a small sprig of rosemary and, if desired, a light sprinkle (about 1/16 tsp) of cracked black pepper over the top to accentuate fruity flavors.

Storage

Leftover sangria (without additional club soda) will keep refrigerated in a sealed container for up to 48 hours. If the sangria becomes dull, stir in a splash more brandy or fresh citrus juice before serving. Add sparkling water only just before serving to preserve effervescence.
