Chill the Sauvignon Blanc to 45–50°F (7–10°C). Place the bottle in the refrigerator at least 2 hours before service, or in an ice bucket with ice and water for 20–30 minutes if needed.

If presenting at a table, keep the bottle on ice and present the label to guests before pouring.

Slice the passion fruit in half and scoop the pulp (seeds and juice) into a small bowl. Thinly slice half a guava into matchsticks or thin rounds. Add 1 tsp fresh lime juice to the passion fruit pulp to brighten the flavor. If you prefer a slightly sweeter accent, stir in up to 1 tsp simple syrup; taste and adjust to balance bright fruit and acidity.

Prepare passion fruit and guava accent

Lightly muddle the guava slices with the passion fruit pulp using the back of a spoon to release fragrance and integrate the textures. Do not over-muddle; you want pieces of guava to remain for visual and textural contrast.

Select a chilled white wine glass. If desired, place a couple of spoonfuls (about 1–2 tsp) of the prepared passion fruit–guava mixture into the bottom of the glass to echo the wine’s tasting notes without overpowering it.

Hold the bottle at the base, pour a small taste for the host or sommelier to approve. Once approved, pour 4–6 oz (120–180 ml) per guest, filling the glass to about one-third to allow aromas to concentrate.

Garnish the rim with a lemon slice if desired. Serve immediately. If multiple guests are being served, keep the remaining bottle chilled in an ice bucket.
