Prepare blender
Place the blender jar on the base and ensure it is clean and dry. Add the fresh pineapple chunks first — this helps with blending.
Add liquids and ice
Pour in the white rum, cream of coconut, pineapple juice, and fresh lime juice over the pineapple. Add the crushed ice on top.
Blend
Secure the lid and blend on high for 20–30 seconds until smooth and frothy. Stop and check consistency; if too thick, add 1–2 tablespoons pineapple juice; if too thin, add a few more ice cubes and pulse until desired texture is reached.
Taste and adjust
Taste the mixture and adjust sweetness or acidity as needed: add a small splash more cream of coconut for sweetness or 1/4 teaspoon fresh lime juice for brightness. Blend briefly after adjusting.
Serve
Pour the blended piña colada into a chilled hurricane glass or tall glass, leaving a little head for garnish.
Garnish
Skewer the pineapple wedge and maraschino cherry, then perch it on the rim of the glass. Lightly grate a pinch of nutmeg over the top if desired for aroma.
