Prepare Purée (if not using store-bought)
Make peach purée
Peel, pit and roughly chop 1 small ripe peach (about 2–3 oz fruit). Place peach pieces in a blender or food processor and purée until smooth (about 20–30 seconds). If desired, strain through a fine mesh to remove fibrous bits. Measure 1 oz of purée for the cocktail and refrigerate any extra.
Mix Cocktail
Chill a martini glass by filling it with ice water and setting aside while you mix.
In a cocktail shaker add: 2 oz vodka, 1 oz peach schnapps, 1 oz fresh peach purée, 0.5 oz fresh lemon juice, 0.25 oz simple syrup, 0.25 oz dry vermouth, and 2 dashes peach bitters (if using).
Add a generous handful of ice (about 1 cup) to the shaker. Cap the shaker and shake vigorously for 12–16 seconds until the outside of the shaker feels very cold and slightly frosty.
Discard the ice water from the chilled martini glass. Double-strain the cocktail into the chilled martini glass using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and any peach solids. This yields a smooth, slightly frothy martini.
Garnish & Serve
Garnish the martini with a fresh peach slice on the rim and a lemon twist expressed over the surface (twist over the drink to release oils) placed on top.
Serve immediately. Optionally provide a cocktail pick for the peach slice.
