Prep
Cook rice (if not pre-cooked)
Cook short-grain brown rice according to package instructions so you have 2 cups cooked. Fluff and keep warm.
Press tofu for 15–20 minutes to remove excess moisture, then cut into 1/2-inch cubes.
Seasoned Tofu
In a medium bowl combine 2 tbsp soy sauce, 1 tsp sesame oil, 1 tsp rice vinegar, minced garlic and grated ginger. Stir to make a marinade.
Add cubed tofu to the marinade and gently toss to coat. Let sit 5–10 minutes so tofu absorbs flavors.
Heat 1 tbsp vegetable oil in a nonstick skillet over medium-high heat. Add marinated tofu in a single layer and cook without moving for 2–3 minutes to brown, then flip and brown other sides, about 4–6 minutes total. Remove and set aside.
Fried Eggs
Heat remaining 1 tbsp vegetable oil in a large skillet over medium heat. Crack 1–2 eggs per bowl (total 4 eggs) into the pan. For runny yolks, cook 2–3 minutes until whites are set but yolks still jiggle; for fully set yolks cook 4–5 minutes or flip for over-easy/medium as desired.
Sauce
In a small bowl whisk together 1 tsp gochujang, 2 tbsp mayonnaise, 1 tsp soy sauce, 1 tsp lime juice and 1 tsp water until smooth. Taste and adjust spiciness or salt, adding more gochujang for heat or water to thin.
Assemble Bowls
Divide the cooked rice between two bowls (1 cup cooked rice per bowl).
Arrange 1 cup fresh spinach, 1/2 cup shredded carrots, and 1/2 cup sliced cucumber across each bowl alongside the rice.
Drizzle the gochujang-mayo sauce over each bowl (about half the sauce per bowl). Garnish with sliced scallions, 1/2 tbs toasted sesame seeds, a small spoonful of kimchi if using, and cilantro or microgreens.
Serve immediately so eggs remain warm and yolks runny if prepared that way.
