Build and mix

Fill a copper mug or highball glass with ice to chill the vessel. In a shaker tin or mixing glass add the vodka, fresh lime juice, cold brewed iced coffee, simple syrup and 2 dashes of angostura bitters. Add a small scoop of ice (enough to chill but not over-dilute) and shake vigorously for about 8–10 seconds until well chilled.

Assemble

Discard the ice used to chill the serving mug (if you used it for chilling) and refill the mug with fresh cubed ice. Strain the shaken mixture over the fresh ice.

Top with ginger beer

Slowly top the cocktail with about 4 oz ginger beer. Gently stir once or twice to integrate the ginger beer with the spirit and coffee elements, trying not to flatten the carbonation.

Garnish & finish

Express a lime wheel over the top to release citrus oils, rub it on the rim if desired, then drop it into the mug. Add a piece of candied or crystallized ginger on a pick or on the rim as an optional garnish. Serve immediately with a straw.
