Steak & Marinade
Marinate steak
In a shallow bowl or zip-top bag combine olive oil, soy sauce, lime juice, Worcestershire, minced garlic, smoked paprika, cumin, kosher salt and black pepper. Add the steak, turn to coat thoroughly, and refrigerate for at least 30 minutes and up to 4 hours.
Cook steak
Remove steak from fridge 15 minutes before cooking to come to room temperature. Heat a cast-iron skillet or heavy pan over high heat until very hot. Add 1 teaspoon neutral oil (if needed) and sear the steak 3-4 minutes per side for medium-rare (internal temp 125-130°F / 52-54°C) depending on thickness. Adjust time for desired doneness. Transfer steak to a cutting board and tent loosely with foil; rest 8-10 minutes to retain juices.
Slice steak
When rested, slice steak very thinly against the grain into bite-sized strips. Set aside and keep warm.
Caramelized Onions & Roasted Peppers
While steak marinates or rests, heat 1 tablespoon butter in a skillet over medium-low heat. Add 1 large thinly sliced yellow onion (about 1 cup sliced) and a pinch of salt. Cook slowly, stirring occasionally, until deeply golden and sweet, about 20–25 minutes. If onions begin to stick, add a splash of water. In the last 3 minutes add roasted red pepper slices to warm through. Remove from pan and reserve 1 cup for quesadillas.
Assemble & Cook Quesadillas
Prepare a clean work surface. Lay out 4 flour tortillas. On half of each tortilla, sprinkle an even layer of 1/4 cup shredded sharp cheddar and 1/4 cup shredded Monterey Jack (totaling 1/2 cup cheese per tortilla).
Fold the tortilla over to create a half-moon quesadilla, pressing lightly to compress the filling.
Melt 1/2 tablespoon butter in a large nonstick skillet or griddle over medium heat. Place one quesadilla seam-side down and cook 2–3 minutes until the underside is golden brown and the cheese begins to melt. Press gently with a spatula, flip and add another 1/2 tablespoon butter; cook 1–2 minutes more until the second side is golden and cheese is fully melted. Repeat with remaining quesadillas, adding butter as needed. For a crispier finish, lower heat slightly and cook a little longer to ensure cheese melts without burning tortilla.
Finish & Serve
Transfer cooked quesadillas to a cutting board and let rest 1 minute. Slice each into 3 wedges. Lightly drizzle with optional truffle oil (about 1/4 tsp per quesadilla) and sprinkle with a pinch of sea salt flakes.
Serve with a dollop of crema or sour cream on the side, lime wedges for squeezing, and extra cilantro if desired.
