Wine Making Process

Harvesting Grapes

Carefully harvest ripe Pinot Noir grapes, ensuring minimal damage to the fruit.

Crushing and De-stemming

Crush the grapes and remove the stems. This can be done by hand or using a crusher.

Fermentation

Transfer the crushed grapes to a fermentation vessel. Add sugar, yeast, and optional tannin. Allow fermentation to occur for about 7-14 days at a controlled temperature (18-24°C).

Pressing

Once fermentation is complete, press the mixture to separate the liquid (wine) from the solids (pomace).

Aging

Transfer the wine to an oak barrel or tank for aging. Allow it to age for 6 months to 1 year, depending on the desired flavor profile.

Bottling

Sulfite the wine if desired for preservation, then bottle the wine using clean bottles and corks.
