Winemaking Process
Harvesting
Begin by harvesting the Chenin Blanc grapes at peak ripeness, ensuring they are free from rot and disease.
Crushing
Crush the grapes to release the juice, separating the skins and seeds.
Pressing
Press the crushed grapes to extract the juice. Collect the juice in a fermentation vessel.
Fermentation
Add the wine yeast to the juice and allow it to ferment at a controlled temperature of around 15-18°C (59-64°F) for about 2-4 weeks.
Adding Sulfur
Once fermentation is complete, add sulfur dioxide to stabilize the wine and prevent oxidation.
Racking
Rack the wine off the sediment into another clean vessel for aging.
Aging
Age the wine in stainless steel tanks or oak barrels for 6 months to 1 year, depending on desired flavor profile.
