Prepare the Vegetables

In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add spinach and cook until wilted, about 2 minutes. Add roasted red peppers and hot peppers, stir to combine, and then remove from heat.

Mix the Burger Mixture

In a large bowl, combine the sautéed vegetables, egg, bread crumbs, salt, and black pepper. Mix until well combined. If the mixture is too wet, add more bread crumbs, a little at a time.

Form the Patties

Divide the mixture into 4 equal portions. Shape each portion into a patty about 1 inch thick.

Cook the Patties

In the same skillet, add a little more olive oil if needed and heat over medium-high. Cook the patties for about 4-5 minutes on each side or until golden brown and cooked through.

Add Cheese

In the last minute of cooking, place a slice of American cheese on each patty and cover the skillet to melt the cheese.

Assemble the Burger

Toast the burger buns if desired. Place the cheese-topped patty on the bun, add lettuce, tomato slices, and additional onion slices. Top with the other half of the bun and serve.
