Prepare the Chicken Patty
In a food processor, pulse the chicken breast until finely chopped. Season with salt, pepper, and garlic powder. Shape the mixture into two patties.

Coat the Patties
Set up a breading station: place flour in one bowl, beaten egg in another, and panko breadcrumbs in a third. Dredge each chicken patty in flour, dip in egg, and coat with panko breadcrumbs.

Fry the Patties
Heat oil in a large skillet over medium-high heat. Fry the patties until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels.

Make the Spicy Mayo
In a small bowl, mix together mayonnaise and hot sauce until well combined. Adjust seasoning to taste.

Assemble the Sandwich
Slice the seeded round rolls in half. Spread a generous amount of spicy mayo on the bottom half, add the crispy chicken patty, and top with pickles. Close the sandwich with the top half of the roll.
