Stuffed Hot Banana Peppers

Method

Preparation and Cooking

  1. 1

    Prepare the Peppers

Preheat your oven to 375°F (190°C). Cut the tops off the hot banana peppers and carefully remove the seeds. Set aside.

  2. 2

    Cook the Filling

In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened. Add the ground beef, cooking until browned. Stir in the cooked rice, salt, and black pepper. Mix in half of the cheddar cheese and remove from heat.

  3. 3

    Stuff the Peppers

Fill each banana pepper with the beef and rice mixture, packing it gently. Place them upright in a baking dish.

  4. 4

    Bake

Sprinkle the remaining cheddar cheese over the stuffed peppers. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.

  5. 5

    Prepare Garlic Bread

While the peppers are baking, toast the garlic bread slices in the oven until golden brown.

  6. 6

    Serve

Remove the stuffed peppers from the oven and let cool for a few minutes. Serve with garlic bread on the side.
