Prepare the Eggplant
Slice the eggplant into 1/2-inch thick rounds. Sprinkle salt on the slices and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry.

Bread the Eggplant
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with black pepper. Dip each eggplant slice first in flour, then in egg, and finally in breadcrumbs, ensuring they are well coated.

Fry the Eggplant
In a large skillet, heat olive oil over medium heat. Fry the breaded eggplant slices in batches until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Assemble the Dish
Preheat the oven to 375°F (190°C). In a baking dish, spread 1 cup of Mamma D's red sauce at the bottom. Layer the fried eggplant slices on top, then add the remaining red sauce over the eggplant. Sprinkle shredded mozzarella cheese on top.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

While the eggplant is baking, prepare the French fries according to package instructions. Serve the baked eggplant on seeded garlic rolls with a side of French fries.
