Preparation and Assembly
Prepare the Chicken Cutlets
Preheat the oven to 400°F (200°C). Season the chicken breasts with salt and black pepper. Dredge each chicken breast in flour, then dip in beaten eggs, and finally coat with breadcrumbs.
Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken cutlets and cook for 4-5 minutes on each side until golden brown and cooked through. Remove and place on a paper towel to drain excess oil.
Assemble the Sandwich
Spread a layer of marinara sauce on the bottom half of each garlic roll. Place a chicken cutlet on top, add more marinara sauce, and then sprinkle with shredded mozzarella cheese.
Melt the Cheese
Place the assembled sandwiches on a baking sheet and bake in the preheated oven for 5-7 minutes until the cheese is melted and bubbly.
Serve
Remove from the oven, let cool for a minute, and serve immediately while hot.
