This smooth lager is a smooth drinking lager without the bitter harsh after taste of most lagers. Just the right blend of grains and cascade hops for a good easy drinking lager.

Heat approximately 4.0 gal of mash water to 165°F (74°C). This will give you a target mash temperature around 150°F (65°C) when grains are added (adjust based on your system heat loss).

Heat strike water

Add the crushed Pilsner, Vienna, Carapils, and rice (if using) to the mash tun and stir to avoid dough balls. Aim for a mash temperature of 148–152°F (64–67°C) for a smooth, moderately fermentable wort. Hold the mash at that temperature for 60 minutes.

After 60 minutes, perform a mash-out by raising temperature to 168°F (76°C) for 10 minutes to stop enzymatic activity and improve lautering.

Sparge with enough water to collect a total pre-boil volume of about 6.5–7.0 gal (accounting for equipment losses) at around 170°F (77°C). Collect ~6.0 gal into the boil kettle.

Bring the wort to a rolling boil and begin a 60-minute timed boil. At 60 minutes (start of boil), add 1.0 oz Cascade hops (bittering).

Boil and hop schedule

With 15 minutes remaining in the boil, add the whirlfloc tablet (or Irish moss) and yeast nutrient (if using).

At flameout (end of the 60-minute boil), add 1.0 oz Cascade hops for flavor/aroma. Whirlpool for 10-15 minutes and then chill the wort rapidly.

Cool the wort to 48–52°F (9–11°C) as quickly as possible using a wort chiller. Transfer to a sanitized fermenter and top up with water to reach 5.0 gal final volume if needed. Aerate or oxygenate the wort thoroughly (1–2 minutes with pure O2 or several vigorous shakes) to support healthy lager yeast.

Cool and oxygenate

Pitch the lager yeast at the target fermentation temperature (48–52°F / 9–11°C). If using a liquid yeast, make a healthy, well-aerated starter. If using dry yeast, rehydrate or pitch according to manufacturer instructions.

Primary fermentation: hold the fermenter at 48–52°F (9–11°C) for 10–14 days or until activity is mostly complete and specific gravity is stable for 2–3 days. Expect an original gravity around 1.048–1.052 and final gravity target ~1.010–1.012 for a smooth, easy-drinking lager.

Raise temperature to 60–65°F (15–18°C) for 2–3 days to encourage the yeast to clean up diacetyl and other byproducts.

Diacetyl rest

After the rest, gradually drop temperature to near-freezing (32–35°F / 0–2°C) for lagering. Rack the beer to a secondary fermenter or keep in primary and lager for 4–8 weeks to clarify and mellow flavors.

Dissolve 3.5 oz corn sugar in 1 cup (240 ml) boiling water, cool and sanitize the solution. Rack the lager into a bottling bucket and gently stir in the priming solution to evenly distribute without aerating.

Prepare priming sugar

Bottle in sanitized bottles, cap, and condition at 65–70°F (18–21°C) for 10–14 days to carbonate. Then cold-condition for another week if possible to clear further.

Chill, pour gently to leave sediment, and serve cold. Expect a smooth, lightly hoppy, crisp lager with minimal harsh bitterness and a clean finish.
