Ginger Syrup

Make ginger syrup

Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat. Add the 3 oz thinly sliced fresh ginger. Bring to a gentle simmer, stirring until the sugar dissolves. Reduce heat and simmer for 8–10 minutes to infuse a strong ginger flavor.

Remove from heat and let steep for 20 minutes to deepen the ginger flavor. Taste after 10–20 minutes and adjust steep time for desired intensity (longer = more heat).

Strain the syrup through a fine-mesh sieve, pressing down on the ginger to extract liquid. Discard solids. Stir in 1 tablespoon fresh lemon juice to brighten the syrup. Cool to room temperature, then refrigerate until cold. Yields roughly 1 cup ginger syrup.

Mixing the Ginger Rebellion

Chill glassware or a pitcher: place beer glasses or a 1-quart pitcher in the refrigerator for 10–15 minutes so the finished drink stays crisp.

Measure and combine: In a clean pitcher, add 4 cups chilled pilsner or light lager.

Add ginger syrup and citrus: Stir in 3 tablespoons of the chilled ginger syrup (adjust between 2–4 tbsp to taste depending on desired sweetness and ginger intensity) and 2 tablespoons fresh lime juice. This proportion yields a balanced ginger brightness without overwhelming the beer character.

Brighten and spice: Add 1 teaspoon fresh lemon zest and 3 dashes of Angostura bitters. If you want heat, add the optional 4 jalapeño slices and let steep in the pitcher for 5 minutes, then remove for a moderate kick. Taste and adjust.

Gently combine with beer: Slowly pour or stir the beer into the pitcher to preserve carbonation — stir with a long spoon using 1–2 gentle strokes, or tilt the pitcher and pour slowly. Avoid vigorous stirring to reduce foam loss.

Chill briefly: Place the pitcher back in the fridge for 3–5 minutes if the beer warmed while mixing. Serve immediately for best carbonation and aromatics.

Plating & Garnish

Serve: Pour into chilled pint glasses, leaving about 1/2-inch headspace. If using individual servings instead of a pitcher, combine in the glass: 1 cup beer, 3⁄4 tbsp ginger syrup, 3/4 tsp lime juice, a couple dashes bitters, then top with beer and stir gently.

Garnish: Slap a mint sprig between your palms to release aromatics and add to each glass. Add a piece of candied ginger on the rim or a thin jalapeño slice for visual contrast if you used jalapeño. Optionally, express a lemon peel over the glass to release oils and drop it in.
