Method
Prepare Glass
Chill glass
If desired, chill the serving glass by placing it in the freezer for 10–15 minutes or by filling with ice cubes for 1–2 minutes, then discarding the ice. A cold glass helps keep the float frothy longer.
Assemble Float
If using vanilla syrup, add 1/2 tablespoon to the Dr Pepper in the glass and gently stir once to incorporate. This step is optional for extra vanilla flavor.
Using a large spoon, gently place the first scoop of vanilla ice cream into the glass so it sits on top of the soda. Add the second and third scoops one at a time, pressing slightly so they partially submerge and create a thick head of foam. Be careful not to overfill; leave a little rim to avoid overflow.
If preparing an adult variation, drizzle 1 teaspoon of bourbon or spiced rum over the ice cream before the foam settles, then wait 10–15 seconds for the alcohol to disperse slightly.
Finish & Garnish
Top with 1 tablespoon of whipped cream if desired, and place a maraschino cherry on top. Serve immediately with a long spoon and a straw.
Advise guests to enjoy quickly: the float is best while the ice cream is still partially solid and the soda remains fizzy.
