Preheat and prep ribs

Preheat oven or smoker to 275°F (135°C). If using a smoker, stabilize temperature. Pat the ribs dry with paper towels. Using a sharp knife or your fingernail, loosen and remove the thin silver skin (membrane) from the bone side if not already removed — grip with a paper towel and pull firmly.

Combine the dry rub ingredients: in a bowl mix brown sugar, paprika, kosher salt, black pepper, garlic powder, onion powder, dry mustard, chili powder and cayenne (if using). Mix until evenly combined and no large brown sugar clumps remain.

Lightly coat both sides of each rack of ribs with yellow mustard — this acts as a binder, not for strong mustard flavor. Sprinkle and rub the dry rub liberally over both sides of the ribs, pressing the rub into the meat so it adheres. Let the seasoned ribs rest at room temperature 20–30 minutes while you prepare your cooking method (or refrigerate up to overnight, wrapped, for deeper flavor).

Low-and-Slow Cook

Place the ribs bone-side down on a wire rack set inside a rimmed baking sheet (if using oven) or directly on the smoker grates. For oven method, pour a small amount of water in the bottom of the pan to help maintain humidity, but do not submerge the ribs. For smoker, maintain 225–275°F and add wood chips/chunks as desired (apple or hickory recommended).

Cook the ribs low and slow until the surface is set and the meat has pulled back from the bone ends about 2.5–3 hours for 2-lb spare ribs at 275°F. Check for tenderness: a toothpick should slide between the bones with slight resistance, or the rack should bend and crack on the surface when lifted with tongs.

Wrap (Texas Crutch) and Finish

Once ribs have developed color (typically after ~2–2.5 hours), prepare a foil wrap. Lay two sheets of heavy-duty foil shiny side in, slightly overlapping. Place the ribs meat-side down, pour the apple juice into the foil around (not on top of) the meat, add the butter and the 2 tablespoons brown sugar inside the foil. Seal the foil tightly to create a steam pocket.

Return the wrapped ribs to the oven or smoker and continue cooking for another 60–75 minutes at 275°F, until the meat is very tender but not falling completely apart—probe with a fork to check.

Unwrap, Sauce, and Rest

Carefully unwrap the ribs (watch for hot steam). Place them bone-side down on the rack or a sheet pan. If using sauce: brush both sides of the ribs with the BBQ sauce (thin with apple cider vinegar if desired). Return to the oven or smoker at 300°F (or under a hot grill) for 10–15 minutes to set the sauce and develop a tacky glaze. If you prefer no sauce, skip this step and simply crisp the exterior 5–10 minutes.

Remove the ribs and let rest 10–15 minutes loosely tented with foil. This helps the juices redistribute and makes slicing easier.

Slice between the bones into individual ribs and serve warm.
