Prepare and Arrange Meats

If beef sausage is uncooked, cook according to package instructions, then cool and slice into 1/4" rounds. Fan the soppressata and speck into loose overlapping stacks: fold each slice in half or into gentle cones to create height and texture. Roll several slices of housemade bologna into tight cylinders to form visual contrast. Place the sausage slices in a small pile or line near one edge of the board.

Prepare Cheeses

Bring all cheeses to room temperature for 20–30 minutes before serving to maximize flavor. Cut Red Dragon cheddar into 1/2" cubes or 1/4" slices depending on preference. Cut the Saint Angel triple cream wheel into 6–8 wedges and slightly separate them for easy picking. Slice the Smoking Goat log into 1/4" rounds or 1/2" medallions and arrange them in a small fan or stack. Place cheeses spaced apart to create stations on the board.

Prepare Small Bites and Garnishes

Pour the whole grain mustard into a small bowl and put it on the board. Place honey in a small bowl or drizzle lightly over the Red Dragon cheddar just before serving. Halve fresh figs (if using) or spoon fig jam into a ramekin. Spread mini gherkins, marcona almonds, dried apricots, and grapes into small clusters or bowls. Keep crackers in easy reach but slightly separated from moist items to avoid sogginess.

Select a large board and place the small bowls (mustard, honey, nuts) first to anchor the layout. Position cheeses next to the bowls so guests can easily pair spreads with cheese. Arrange the cured meats around the cheese stations, alternating colors and textures (for example, speck near the Saint Angel, soppressata near the Red Dragon). Fill remaining spaces with crackers, grapes, dried apricots, and gherkins. Tuck rosemary or thyme sprigs between components for fragrance and visual interest. Ensure there is a knife or spreader at each cheese and a fork or toothpick for pickles/nuts.

Final presentation: leave small gaps to make the board look abundant but not overcrowded. Offer napkins and extra plates. Serve immediately after assembly; if you must hold the board, keep it at room temperature no longer than 2 hours for best quality.
