Berry Filling
Preheat the oven to 375°F (190°C). Position rack in middle of oven.
In a large bowl, combine 4 cups mixed berries, 2 tablespoons granulated sugar, 1 tablespoon lemon juice, 1 teaspoon lemon zest, 2 teaspoons cornstarch, 1/2 teaspoon salt, and 1/2 teaspoon vanilla extract. Gently toss to coat the berries without crushing them. If using frozen berries, do not thaw fully—toss them frozen to reduce excess liquid.
Let the berry mixture sit for 5–10 minutes so the cornstarch begins absorbing juices; this helps the filling thicken while baking.
Transfer the berry mixture to a 9-inch (23 cm) round or 8x8-inch square baking dish, spreading into an even layer. If there is excess liquid in the bowl, spoon berries and syrup into the dish but leave behind a little extra liquid—reserve if you want to spoon over servings.
Cobbler Topping (Biscuits)
In a medium mixing bowl whisk together 1 1/2 cups all-purpose flour, 3 tablespoons granulated sugar, 1 teaspoon baking powder, and 1/2 teaspoon salt until evenly combined.
Cut 6 tablespoons cold unsalted butter into small cubes. Using a pastry cutter, two forks, or your fingertips, cut the butter into the dry ingredients until the mixture resembles coarse crumbs and pea-sized bits of butter remain. Work quickly to keep the butter cold.
Stir 3/4 cup buttermilk and 1/2 teaspoon vanilla extract into the flour-butter mixture just until a shaggy, slightly sticky dough forms. Do not overmix.
Using a spoon or ice cream scoop, drop rounded tablespoon-to-2-tablespoon mounds of the topping dough onto the berry layer, spacing them roughly 1 inch apart. You want coverage but some gaps so steam can escape and berries bubble between the biscuits.
Brush the exposed tops of the dough lightly with 1 tablespoon melted butter and sprinkle with 1 tablespoon coarse sugar (if using) to help golden color and a bit of crunch.
Baking and Finishing
Bake the cobbler in the preheated 375°F (190°C) oven for 30–40 minutes, or until the topping is golden brown and a knife inserted into a biscuit piece comes out clean, and the berry filling is bubbling around the edges. If the topping browns too quickly, tent loose foil over the dish for the last 10 minutes.
Remove from oven and let cool on a wire rack for at least 15 minutes. The filling will thicken as it cools; cooling also helps the cobbler set so it serves better.
Before serving, optionally grate 1/4 teaspoon lemon zest over the top for brightness. Serve warm with vanilla ice cream or whipped cream if desired.
