Method

Batata vada (potato fritters)

    Boil and mash potatoes

    Place cubed potatoes in a pot, cover with cold salted water, bring to a boil and simmer 12–15 minutes until tender. Drain thoroughly and return to the hot pot for 1–2 minutes to evaporate excess moisture. Mash coarsely and set aside.

    Prepare tempering

    Heat 1 tablespoon vegetable oil in a small skillet over medium heat. Add mustard seeds and wait until they begin to pop. Add curry leaves, chopped onion, green chilies, grated ginger and garlic. Sauté 2–3 minutes until softened and translucent. Add turmeric and asafoetida, stir 15 seconds. Remove from heat.

    Mix spiced potato filling

    Add the tempering (including oil) to the mashed potatoes. Add chopped cilantro and salt. Mix thoroughly, taste and adjust salt. Divide the mixture into 6 even portions and shape each into a smooth ball or slightly flattened patty about 2–3 inches across. Place on a tray and refrigerate 10 minutes to firm up (optional but helps batter adhesion).

Batter & frying

    Make the pakora batter

    In a bowl, whisk together gram flour, rice flour, baking powder, turmeric, red chili powder and 1/2 tsp salt. Gradually add about 3/4 cup water while whisking to form a thick, smooth batter that coats the back of a spoon (consistency like pancake batter but slightly thicker). If batter is too thick, add a tablespoon of water at a time.

    Heat oil and test

    Pour 2 cups vegetable oil into a deep pot or deep-fryer and heat to 350°F (175°C). If you don't have a thermometer, drop a small amount of batter into the oil — it should sizzle and rise slowly without browning instantly.

    Coat and fry vadas

    Working with one potato ball at a time, pat dry excess moisture, dip and coat completely in batter, letting excess drip off. Carefully slide into hot oil. Fry 3–4 vadas at a time (do not overcrowd) for 3–5 minutes, turning occasionally, until golden brown and crisp. Remove with a slotted spoon and drain on paper towels. Keep warm in a low oven if making ahead.

Curried ketchup (tangy-spiced ketchup)

    Heat 1 teaspoon oil in a small skillet over medium heat. Add the grated onion and sauté 3–4 minutes until soft and slightly caramelized. Add garam masala, cumin powder and chili powder; cook 30 seconds to bloom the spices. Stir in ketchup, vinegar and sugar. Simmer 1–2 minutes until flavors meld. Taste and season with 1/8 tsp salt if needed. Remove from heat and let cool slightly.

Cilantro chutney (green chutney)

    Combine cilantro, mint (if using), green chili, lime juice, roasted peanuts or roasted chana dal (if using), salt and 2 tablespoons water in a blender or food processor. Blend to a smooth but slightly coarse paste, adding more water 1 teaspoon at a time only as needed to reach a spreadable consistency. Taste and adjust salt and lime. Transfer to a bowl and refrigerate until ready to use.

Tamarind-date chutney (imli chutney)

    In a small saucepan combine tamarind paste, date paste (or chopped dates), jaggery, cumin powder, chili powder and 2 tablespoons water. Bring to a gentle simmer and cook 3–4 minutes until slightly thickened and glossy. If using whole dates, simmer until soft then mash or blend to smooth. Taste and adjust sweet/sour balance with more jaggery or tamarind as needed. Cool to room temperature.

Assembly

    Slice King's Hawaiian rolls horizontally, leaving a hinge if you prefer. Lightly butter the cut faces. Toast cut-side down in a skillet over medium heat until lightly golden (about 1–2 minutes) or toast under a broiler briefly.

    Spread about 1 tablespoon curried ketchup on the bottom half of each roll. Add 1 teaspoon tamarind-date chutney and 1 tablespoon cilantro chutney (adjust to taste) either directly on top of the ketchup or on the top roll so each bite has all three flavors. Place one hot batata vada into each roll. If using, add a fried green chili alongside the vada.

    Serve immediately while vadas are hot and the rolls are warm. Provide extra chutneys on the side for dipping.
