Measure each wine: pour 1.5 cups of Encruzado, 0.75 cup of Cercial and 0.75 cup of Bical into a clean measuring vessel or pitcher.

Gently combine the three wines by swirling the pitcher once or twice. Allow the blend to rest at cool room temperature (60–68°F / 15–20°C) for 10–15 minutes so aromas integrate.

If you prefer the wine chilled, fill a bowl with ice and cold water, place the pitcher or bottle in the ice bath for 5–8 minutes, or briefly add 1/2 cup ice into the serving decanter and stir gently to cool (remove before serving to avoid dilution).

Add a thin strip or two of lemon peel to the pitcher and drop in 1–2 mint sprigs to lightly perfume the blend. If using, sprinkle a very small pinch (about 1/4 tsp) of sea salt into the wine and stir once — this can accentuate mouthfeel and fruit notes. Do not over-salt.

Brighten with aromatics

For a slightly spritzy, convivial style, pour the blended wine into a chilled carafe and top with 1/2 cup neutral sparkling water just before serving. Stir gently once to integrate.

Optional spritz for lighter style

Pour the blended wine into chilled white-wine glasses or small tulip glasses. Garnish each glass with a small mint sprig or a curl of lemon peel. Serve immediately.

If not consumed immediately, re-cork the bottle or return the blend to a sealed container and refrigerate. Consume within 2–3 days for best freshness; give it a short swirl to reintegrate before serving.
