Prepare fruit
Cut one passionfruit in half and scoop out the pulp. If using a whole fruit listed as 'each', reserve one half for garnish and use the pulp from the other half (about 1–1½ tablespoons).
Add 2 oz vanilla vodka, the passionfruit pulp (about 1 medium fruit's pulp or ~1–1½ tbsp), 0.5 oz vanilla syrup and 0.5 oz fresh lime juice into a cocktail shaker.
Fill the shaker with ice (about 1 cup), secure the lid, and shake vigorously for 10–15 seconds until well chilled and slightly frothy from the passionfruit.
Double-strain the mixture through a fine-mesh strainer into a chilled coupe or martini glass to remove seeds and ice shards. Alternatively, strain into a rocks glass over fresh ice if preferred.
Drop a Luxardo cherry into the glass or skewer it and rest on the rim.
Shot
Pour 2 oz of well-chilled Champagne or dry sparkling wine into a shot glass or small flute. Serve immediately alongside the cocktail.
Traditionally, the guest sips the sparkling wine between sips of the passionfruit cocktail. Present the Champagne shot on the side and optionally offer the reserved passionfruit half for an aromatic garnish.
Garnish / Serve
If using, float the reserved passionfruit half in the cocktail or place it on the saucer next to the glass. Add a lime wheel to the rim for color.
Serve immediately while sparkling wine is still effervescent.
