    Prep potatoes

    Wash and peel (optional) the russet potatoes. Using a mandoline or sharp knife, slice potatoes very thinly (about 1.5 mm / 1/16 inch). Place slices in a large bowl of cold water and rinse until water runs clear to remove surface starch.

    Dry

    Drain the potato slices and spread them on clean kitchen towels or paper towels. Pat thoroughly dry (this prevents oil splatter and gives crisp chips).

    Heat oil

    In a heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C). If you don't have a thermometer, heat until a single potato slice sizzles immediately but does not brown in less than 30 seconds.

    Fry

    Fry the potato slices in small batches (do not overcrowd) for 2–3 minutes, turning as needed, until golden brown and crisp. Use a slotted spoon to transfer chips to a paper towel–lined tray to drain. While still warm, season lightly with kosher salt and fresh cracked black pepper. Repeat until all slices are fried.

Cheese Sauce

    Make roux base

    In a small saucepan over medium-low heat, melt the unsalted butter. Stir in the all-purpose flour and cook, stirring constantly, for about 30–60 seconds to form a light roux (this helps stabilize the sauce; keep it pale, do not brown).

    Add milk

    Slowly whisk in the whole milk to the roux, beginning with a tablespoon at a time to avoid lumps. Increase heat to medium and continue whisking until the mixture thickens slightly and becomes smooth, about 2–3 minutes.

    Melt cheese

    Reduce heat to low. Add the crumbled Danish bleu cheese a handful at a time, stirring until fully melted and incorporated into a creamy sauce. If the sauce is too thick, add up to 1–2 tablespoons more milk to reach a pourable consistency.

    Season

    Stir in the lemon juice (optional), salt, and freshly ground black pepper. Taste and adjust seasoning — bleu cheese is salty, so be conservative with additional salt.

Assembly & Finish

    Plate the warm chips in a shallow serving bowl or on a platter, keeping them in a single layer so sauce reaches most pieces.

    Warm the cheese sauce briefly if it has thickened (low heat, stirring) to make it easy to drizzle. Pour or spoon the melted Danish bleu cheese over the chips, covering evenly.

    Drizzle AZ Gunslinger hot sauce over the cheese-topped chips in a thin stream. Start with 2 tablespoons and add more to taste; swirl the sauce slightly so some chips get direct heat and others get milder flavor.

    Sprinkle chopped fresh chives and a light dusting of smoked paprika over the top for color and a smoky finish. Serve immediately while chips are hot and crisp.
