Prepare filling
In a medium bowl, combine the softened cream cheese (break into cubes so it mixes easily), chopped crab meat, finely sliced green onions (reserve a few green tips for garnish if desired), minced garlic, soy sauce, Worcestershire sauce, sugar, salt, white pepper, and sesame oil. Mix thoroughly until fully combined and smooth. Taste and adjust seasoning — it should be slightly salty and savory with a touch of sweetness.

Prepare wrappers and egg wash
Beat the egg with 1 teaspoon cold water in a small bowl to make an egg wash. Lay out wonton wrappers in a single layer on a clean surface and keep them covered with a lightly damp towel to prevent drying while you work.

Fill and fold wontons (24 pieces)
Place about 1 rounded teaspoon (approximately 10–12 g) of the crab-cream cheese filling in the center of each wonton wrapper. Dip your finger in the egg wash and lightly brush the edges of the wrapper. Fold according to your preferred shape: Option A — bring opposite corners together to make a triangle and press to seal any trapped air out; Option B — bring all four corners together and pinch at the top for a pouch/flower shape. Ensure edges are well sealed so oil does not enter during frying. Repeat until all wrappers are filled. Place finished wontons on a parchment-lined tray, spaced apart.

Heat oil
Pour vegetable oil into a deep, heavy-bottomed pot or wok to a depth of about 2–3 inches (enough to fully submerge the wontons). Heat the oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small corner of wrapper into the oil — it should sizzle and rise steadily without browning instantly.

Fry wontons
Working in small batches (4–6 at a time depending on pot size), gently lower the prepared wontons into the hot oil with a slotted spoon or spider. Fry for 1.5–3 minutes, turning occasionally, until they are evenly golden brown and crisp. Avoid overcrowding which lowers oil temperature. Use the slotted spoon to remove wontons and transfer to a wire rack set over a baking sheet or paper towels to drain. Keep finished rangoon warm in a low oven (200°F / 95°C) if making multiple batches.

Serve
Serve hot with the sweet & sour dipping sauce. Garnish with reserved green onion tips or a light dusting of white pepper if desired. Leftovers can be reheated in a 375°F (190°C) oven on a baking sheet for 8–10 minutes to restore crispness.

In a small saucepan, combine the rice vinegar, ketchup, sugar, water, soy sauce, and pineapple juice (if using). Stir to dissolve the sugar. Place over medium heat and bring to a gentle simmer.

Mix the cornstarch with a small amount of cold water to form a slurry (about 1 tsp cornstarch + 1 tsp water). Whisk the slurry into the simmering sauce, stirring constantly until the sauce thickens slightly (30–60 seconds). If using, add a pinch of red pepper flakes for a mild kick. Remove from heat and let cool slightly — the sauce will thicken a bit more as it cools.

Transfer the sauce to a bowl for serving alongside the hot Crab Rangoon.
