Prepare Ingredients

    Prep Shrimp

    Pat the shrimp dry with paper towels. If frozen, thaw completely and remove any remaining veins. Lightly season the shrimp with 1/8 tsp kosher salt and a pinch of white pepper; set aside.

    Prep Broccoli

    Trim broccoli into bite-sized florets (about 4 cups). Rinse and drain. If stems are thick, peel and slice them into 1/4-inch pieces so they cook evenly.

    Mince the garlic and ginger. Mix the sauce ingredients: in a small bowl whisk together soy sauce, oyster sauce, rice wine, chicken broth, sesame oil, and cornstarch dissolved in 1 tsp water until smooth; set nearby.

Cook Broccoli

    Fill a large pot with 3 cups of water and bring to a rapid simmer. Add a pinch of salt. Blanch the broccoli florets and sliced stems for 45–60 seconds until bright green and just tender-crisp. Immediately transfer broccoli to a bowl of ice water to stop cooking. Drain and set aside.

    Alternatively, if you prefer to skip blanching, stir-fry broccoli directly: heat 1 tbs oil in the wok/pan, add broccoli and 2–3 tbs water, cover and steam for 2–3 minutes until bright green and slightly tender; uncover and proceed to next step.

Cook Shrimp and Finish

    Heat a large skillet or wok over medium-high heat until hot. Add 1 tbs vegetable oil and swirl to coat. Add minced garlic and ginger and stir-fry for 10–15 seconds until fragrant (do not burn).

    Add the seasoned shrimp in a single layer. Stir-fry 1–2 minutes per side (total 2–4 minutes) until shrimp are pink and just cooked through. Remove shrimp to a plate and keep warm.

    Wipe the pan if needed, then return to medium-high heat and add the blanched broccoli and the remaining 1 tbs oil. Stir-fry 30–45 seconds to reheat the broccoli and coat with oil.

    Give the prepared sauce a quick stir (cornstarch may have settled) and pour it into the pan with the broccoli. Stir continuously—sauce will thicken in 30–60 seconds. If sauce becomes too thick, add up to 1 tbs water or broth to loosen.

    Return the cooked shrimp to the pan, toss gently to combine and heat through for 30 seconds. Taste and adjust seasoning with up to 1/8 tsp more salt or a pinch more white pepper if needed.

    Turn off heat. Drizzle with the optional sliced green onion and sprinkle toasted sesame seeds before serving.
